Koose, also known as Akara in some parts of West Africa, including Nigeria is not only tasty but also loaded with nutrients from beans.
It offers a great source of plant-based protein, fibre and vital minerals.
Often served with millet porridge, koose is cherished as one of Ghana's popular street foods.
It serves as a delightful breakfast or snack as it is hard to resist and simple to prepare.
Below are the ingredients needed to make that delicious koose you have been craving for:
One medium onion
Spring onion (optional)
2Habanero pepper
2cups of beans
1teaspoon of salt
1teaspoon of Ginger
1teaspoon of garlic
2 eggs
Method
In a bowl, soak the beans overnight. Once the beans have been soaked, rinse them two or more times.
Next, wash the onion and spring onion, then cut them in half; blend half and chop the other half into smaller pieces.
In a blender, combine the beans, chopped onion, and spring onion, adding enough water, then blend until smooth.
Pour the mixture into a bowl and add salt, ginger, garlic, and the chopped spring onion, then add the eggs.
Mix everything thoroughly.
Preparation
Heat oil in a pan for 3-5 minutes, and then use a small ladle to pour the mixed beans into the pan and fry for 5-10 minutes.
Once done, remove the koose from the hot oil.
Serve the koose alongside millet porridge (Hausa Koko) or Tom brown.
