How to make authentic Ghanaian palava sauce

Kontomire stew, made from taro leaves, is a beloved Ghanaian dish that’s both delicious and nutritious. It’s rich in vitamins A, C, and E, as well as essential minerals like calcium and iron.

Ingredients

Palm oil

Taro leaves (kontomire)

Fermented fish (momone) optional

2 medium onions

5 medium tomatoes

Habanero pepper (to taste)

5 eggs

Salmon (or any preferred fish)

Salt

Ginger and garlic

Seasoning cube, curry powder, thyme, adobo, or any preferred seasonings


Instructions

Prep Ingredients:

Thoroughly wash the taro leaves, onions, tomatoes, ginger, and garlic. Chop them into smaller pieces.

In a blender, combine habanero pepper, one onion, ginger, and garlic. Blend until smooth.

Dice the tomatoes into small pieces.

Begin Cooking:

Heat the palm oil in a pot for 2-3 minutes. Add the fermented fish (if using) and fry for about 2 minutes until fragrant.

Add sliced onions to the pot and stir well.

Add Blended Ingredients:

Pour in the blended pepper and onion mix. Stir and allow it to cook for 5 minutes, then add the chopped tomatoes. Stir again to combine.

Prepare the Eggs:

In a bowl, crack the eggs, add a pinch of salt, and whisk. Pour the beaten eggs into the pot and stir gently until everything is well-mixed. Allow it to cook for a few minutes.

Add Fish and Seasonings:

Add the salmon (or your choice of fish) along with the seasoning cube, curry powder, adobo, thyme, and a pinch of salt. Stir and let it cook until well blended.

Incorporate the Taro Leaves:

Add the chopped taro leaves to the pot, stir to mix, and cover. Let it cook for about 10 minutes until the leaves are tender. *Tip:* You can pre-cook the taro leaves if preferred, but adding them at this stage keeps the flavour fresh.

Final Touches:

Once cooked to perfection, remove from heat. Your kontomire stew is now ready to be served.

Serving Suggestions
Enjoy your kontomire stew with rice, boiled yam, or boiled plantain.

Note: This recipe can be made in about 40-50 minutes.
