Ingredients for Groundnut Soup
1. Cup of peanut butter
2. 2lb/1kg meat
3. Large Tomatoes
4. medium-sized onions
5. 6 scotch bonnet peppers
6. 1 seasoning/bouillon cube
7. Half teaspoon rosemary
8. 1 finger ginger
9. Garlic cloves
10. 2tbsp tomato paste 12. salt to taste
Preparation of Groundnut Soup
1. Combine garlic, ginger, half cup of water, one onion, tomato paste, rosemary, 3 scotch bonnet peppers and blend to paste. Strain into the meat in a pot. Sprinkle seasoning cube and a pinch of salt.
2. Set on heat and let it boil for 7-10 minutes, add water and let the meat cook till it is easy to chew.
3. In another pot, combine fresh tomatoes, in addition to the remaining onion and set on heat. Add 2 cups of water and let it boil for 5 minutes.
4. Transfer into a blender, add the peanut butter, and blend everything to paste.
5. Strain into the pot containing the meat. Stir, and add another cup of water. Let it simmer on medium heat for about 20 minutes.
6. Add extra scotch bonnet peppers for extra heat and colour.
7. Stir and serve after some minutes.
