Yam With Egg Stew: How the healthy, delicious meal is made

Yam with egg stew is a healthy and delicious meal that’s easy to prepare and perfect for both lunch and dinner.

This recipe for egg sauce, commonly known as egg stew, can be ready in just 35 to 40 minutes.

Ingredients:

Tuber of yam

Salt

5-6 eggs

4 medium-sized tomatoes – chopped

2 Onions-chopped

Ginger and garlic- blend

Seasoning, curry, thyme. You can use any seasoning of your choice; I prefer to use these ones.

So we start by slicing the yam to your preferred size and peeling the skin off. Rinse in clean water till runs clear and no residue in the water.

Put yam in a pan, add enough water to cover it, add salt place on medium heat, and cook it soft drain water from yam.

Let's move on to the egg sauce

Break eggs into a shallow bowl.

Whisk the egg whites and yolks together until well combined. Add salt and whisk again, then set aside.

Heat a frying pan over medium heat and add vegetable oil. Let it heat for about 2-3 minutes.

Add chopped onions and sauté for about 3 minutes. Then, add blended pepper and cook for another 3 minutes.

Incorporate chopped tomatoes and cook until the oil separates from the sauce. Season with salt, seasoning, curry, and thyme, then add blended garlic and ginger.

Stir to combine all the ingredients in the sauce.

Pour the whisked eggs into the sauce and let it sit for about 2 minutes before stirring to scramble. Wait an additional minute.

Serve the egg sauce with yam.
