Green Shito sauce, often referred to as kpakoshito sauce in Ghana, is a versatile condiment loved across the nation. This flavorful sauce pairs excellently with a variety of dishes, including banku, kenkey, rice, fried yam, and potatoes.
Ingredients:
Kpakotoshito or scotch bonnet pepper
Green chili
Chopped green bell pepper
Ginger
Garlic
Dried rosemary
Coriander seeds
Spring onions
Onions
1/2 cup oil
Bay leaf
Chicken stock cube
Salt to taste
How to make green shito sauce
Preparation:
Begin by gathering all the required ingredients. Wash and chop the green bell pepper, spring onions, and onions into smaller pieces to facilitate blending.
Blending:
Place the kpakotoshito or scotch bonnet pepper, green chili, chopped green bell pepper, ginger, garlic, dried rosemary, coriander seeds, spring onions, and onions into a blender. Add a small amount of water to aid in blending. Blend until you achieve a smooth consistency.
Cooking:
Heat the oil in a saucepan over medium heat. Add the bay leaf to infuse flavor into the oil. Once the oil is hot, carefully pour in the blended mixture.
Seasoning:
Crumble in the chicken stock cube and stir the ingredients well to combine. Allow the sauce to simmer on medium heat for approximately six to seven minutes, or until you notice the oil starting to separate and settle on the surface of the sauce.
Taste and Adjust:
Taste the sauce and adjust the seasoning by adding salt as per your preference. Stir well to incorporate the salt.
Storage:
Once the sauce has cooled down, transfer it to a clean, airtight container. You can store the Green Shito sauce in the refrigerator for up to a week. Alternatively, if you wish to preserve it for a longer duration, the sauce can be stored in the freezer for up to three months.
